The lighthouse at Hook Head stands resolute against the full force of the Atlantic Ocean on Ireland’s southern coast, 10 miles from the distillery – so close that Oliver Cromwell vowed to take Waterford 'by hook or by crook' in the 17th century. In its shadow, Martin Foley grows barley on clay/loam soils derived from limestone, belonging to the Elton series. Exposed to the full range of salt-laden storms, sea mists & ocean breezes, it’s an extreme maritime terroir.
Nose: Earthy maltiness & fresh soil, citrus peel, breadcrust, clove, white pepper, caramel, milk chocolate, salted popcorn, barnyard, oak green foliage.
Taste: It's a spice bomb up front; with cloves, white pepper, salted caramel, liquorice, ginger biscuits, lemon zest, & chilli chocolate.
Finish: Dry, but it leaves a lasting oiliness that holds the spiciness for a long time.

In Ireland's sunny southeast, warmed by the Gulf Stream, the mild, moist air sweeps across the fertile soil to create a green landscape - and the best barley in the world. As barley is the source of the complex flavours of malt whisky, it makes a lot of sense to focus on where and how barley is grown. These flavours are shaped by place, the soil that nourishes its roots and the microclimate in which it matures.
They have worked with over 100 Irish growers, about forty a year. All of their whiskies use 100% proven Irish grown barley - one farm, one terroir. Every year after harvest, the roads of rural Ireland fill with their growers' tractors carrying Single Farm Origin barley, and around the same time they converge on a special bespoke storage facility, strategically located in the middle of their barley fields.
After several years of maturation in the best of French and American oak, each exhibiting its own nuances, it all comes together as a wonderful chorus of harmonious flavours into a single malt whisky.
