Glendalough Distillery was founded by a group of friends from Wicklow and Dublin with a passion for reviving the heritage of craft distilling in Ireland. There were over 200 licensed distilleries in Ireland in the 18th and 19th centuries and along with countless unlicensed distilleries they produced various styles of poitin, whiskey, gin and even absinthe. More recently this has dwindled to a small handful.
After many an evening of banter and debate about why there weren't more craft distilleries in the birthplace of distilling, the friends left the safety of their day jobs, headed for the mountains and took a chance on something more meaningful. Together they built a craft distillery near their favourite spot in the mountains, Glendalough.
Like most Irish whiskeys, Glendalough is aged in Bourbon casks. They break with tradition by finishing all of their whiskies in a second, very different cask. These are chosen specifically to bring out the flavours already inherent in the whisky. These include the aforementioned American bourbon casks, as well as Spanish oloroso sherry casks, Dublin porter casks, Japanese mizunara casks and Irish oak casks.
